			<content:encoded><![CDATA[<p>I’m one of those people who can eat salad at anytime of day or night, even for breakfast. Last year my favorite salad was spring mix, but no more. These days, I prefer arugula, which can serve as an entire meal if I add some beans for protein.(Right photo by Charliebay).</p>

<p>Arugula is a leafy green vegetable that is best eaten raw, although it also tastes good toasted inside a panini  sandwich.  It&#8217;s one of the few types of lettuces that can hold up to heat without getting slimy. It’s closely related to other  cruciferous greens and <strong><a href="http://www.brighthub.com/health/diet-nutrition/articles/44644.aspx" target="_blank">arugula </a></strong> has few calories but loads of nutrients.</p>
<p>My favorite arugula salad includes a mixture of feta or goat cheese, toasted walnuts, cranberries and grape tomatoes topped with a big chunk of avocado (my other favorite green food).</p>
