Salad – morning, noon and night
I’m one of those people who can eat salad at anytime of day or night, even for breakfast. Last year my favorite salad was spring mix, but no more. These days, I prefer arugula, which can serve as an entire meal if I add some beans for protein.(Right photo by Charliebay).

Arugula is a leafy green vegetable that is best eaten raw, although it also tastes good toasted inside a panini sandwich. It’s one of the few types of lettuces that can hold up to heat without getting slimy. It’s closely related to other cruciferous greens and arugula has few calories but loads of nutrients.
My favorite arugula salad includes a mixture of feta or goat cheese, toasted walnuts, cranberries and grape tomatoes topped with a big chunk of avocado (my other favorite green food).

If I must have a starch, I also like this salad stuffed into a sandwich made from pita or folded into a toasted flat bread. OrI have a piece of multigrain toast spread with hummus. (Photo credits: above, Ms. Teas; below, mbgrigby)
